Is this even possible? If so, how? During what time period? Led by which Korean General? Defended by which Shogunate or Taiko or Regency?

Disclaimer: The Mongol Invasions of 13th century cannot count as a "Korean" invasion.

It's possible, the navy of Joseon Korea during the Imjin War were pretty good against the Japanese navy.

These are the factors, not the only ones, that would get Korea to start an invasion after Japan is defeated.
  1. If the Japanese invasion didn't devastate the peninsula so much.
  2. Admiral Yi isn't killed by a bullet in the final battle of the war.
  3. The Confucian scholar government is mostly controlled by a pro-war faction against Japan.
Another early factor is that King Seonjo isn't so corrupt, showing favouritism for an anti-war faction shortly before the Seven-Year War. Instead, he believes the delegates who told him that Hideyoshi is planning for an invasion and plans for it.
